Essential Game Cookery Course
This course is designed to act as an introduction to the art of game cookery. Clients will prepare three recipes, including Pheasant, Rabbit and wild Venison. There will be a morning introduction which will include tips and shortcuts (i.e. what to do with the brace of pheasants your husband/wife brings home!) followed by the basic principles of easy butchering, marinating and timing and the preparation of one dish for lunch During the afternoon we will prepare the two further recipes, with clients working in pairs. Constant advice will be given, the idea being to give you the confidence to go home and recreate the dishes perfectly. For those who have already attended the Essential Game Cookery Course and wish to progress to an advanced level or for those who already have a good understanding of cookery skill and knowledge of the field, we also offer the Advanced Game Cookery Course. Thisincludes advanced butchery, technical sauces, searing and roasting, making stocks, cooking the full range of seasonally available game, sous vide and other skills. Mike Robinson: Mike is a regular presenter and guest chef on UKTV Food's daily live show Great Food Live , and also presents numerous mini series for UKTV Food. He is also a regular chef presenter on BBC2's Saturday Kitchen ; he was in fact the first chef to launch the programme. Since 2001, Mike has presented five series for UKTV Food - Chalet Slaves filmed in Chamonix in the French Alps and Safari Chef filmed in Kenya. He was involved in the making of four series: 'Heaven's Kitchen' , 'Heaven's Garden', 'Heaven's Kitchen Cookbook ' and "Heavens Kitchen at Large" - all showing on UKTV (Sky) and continually repeated. He also has a book - Wild Flavours - published in September 2005. As well as presenting, Mike often does regular cooking demonstrations at a variety of exhibitions throughout the UK including The Good Food Show, The Ideal Home Show and the Chelsea Flower Show. He has also held demonstrations at several gourmet food festivals in South Africa. He writes a popular monthly article on cooking in " The Field " magazine. Mike has always been an outdoors man since a very early age and his greatest passion is cooking game and wild food generally. *All courses will start at 10am and go on until approx 4.30pm. *Mike Robinson will be teaching the Essential and Advanced Game courses.
